How do I add a fermata/hold to all lines BUT one: the voice that sings while everyone else is holding on? Or maybe better the opposite, how do I delete that one and only fermata?

You can’t, exactly. Fermatas are connected. But you can switch to Engrave mode and drag the offending fermata outside the page margin, which will effectively remove it from the layout. It’s a bit of a workaround, but it works quite well.
There should be a hide fermata command in properties for such cases.
