When in Note Input mode, I can’t input notes below G3 in the Treble Clef without using the piano at the bottom of the UI. How do I increase the amount of ledger lines available below the Treble Clef to input notes? ( I am using trackpad/mouse input, not keyboard btw)

How are you inputting notes?
If using the computer keyboard, Dorico will normally enter the nearest named note to the last entered note. If you want to force a note to be above or below the last note, use the modifiers shift-alt (for above) or ctrl-alt (for below).
So ctrl-alt-G will enter the nearest G below the last entered note.
If a note does appear in the wrong octave, simply move it down by using ctrl-alt down arrow (or up with ctrl-alt up arrow) and carry on.
(Edit: it is more complicated to explain then it is to implement!)

I’m using my MacBook’s trackpad, so I’m guessing it’s equivalent to a mouse. When I hover my cursor over the bottom ledger lines of the Treble Clef to input a note, there are only two lines before it switches to the Bass Clef. My goal is to be able to have more available ledger lines below the Treble Clef without it thinking I want to insert notes in the Bass Clef top ledger lines.
For example, the two selected notes are supposed to be F’s but the ledger lines only go as low as G before switching to Bass Clef input.
I think, if using mouse for note input, Dorico has to guess which stave you intend to enter that note on and that will limit the ledger lines.
I rarely use mouse for note input. Computer keyboard is quicker!
I can only implore you in the strongest terms to learn any other method of note entry. Clicking in with a mouse is the most horrendously inefficient manner possible. I promise you that the short amount of time it will take you to learn another entry method (even pressing letter names on the qwerty keyboard) will pay you back hundred-fold over the course of time.
Also I suggest you to learn other input methods (computer keyboard or midi keyboard).
Nevertheless as an experiment you can test/try the following:
-In Layout Options/Vertical Spacing look for “In galley view, expand ideal staff gaps to:” and put it for example to the maximum (400%)
-in Galley View the staves are now very distant from each other: in this case Dorico let you (in Galley View) input (with the mouse) the notes till 8 ledger notes above the staff and 7 ledger notes below.
(even if I not recommend this workflow…, is just an experiment to know the possibilities)
One could also enter the note in the bass clef and use ALT/OPT + N (think N for North) to move the note to the staff above.
But I agree with @Romanos, et al. that using another method of note entry (keyboard, either QWERTY or MIDI) is preferable.

In the meantime, if you move the two staves a lot farther apart, you’ll get more lager lines available.
