One file has an option for adding Piano as 1 staff--can't recreate in others

I have been creating voice/piano accompaniment files in Dorico. When I set up the file I have been adding 2 piano instruments with the voice in Piano 1 and piano accompaniment in Piano 2. Yesterday I opened an older Finale file in Dorico for the first time and it allowed me to change the voice line to Piano and gave me an option to make it 1 staff or 2 staves. I chose 1 staff and all is good with this file. See attached instrument list picture.

I’ve tried to recreate this as I thought maybe this was a new feature I hadn’t seen since an update. I can’t do it! How do I get it to show up again? I’ve also attached the Dorico file that let me do it. I would love to have this set up as a template as I do this ALL the time with my files. It’s a lot easier than having to hide a staff every time I start a new file. Any help appreciated.

You’ve created a custom instrument once in this score

If you click on the star bottom left, it is saved as default and available in other projects too

The 1-stave instrument may also be created if you import a piano XML and end up with two pianos in Setup (each will be a 1-stave instrument)

The importing of the old Finale file’s xml must have created it. Thanks for that info–and now I know how to create some templates from there.
