Can anyone tell me how to enable these “Klezmer” scoops to be included in playback?

They’re not “included”. They could be, if you happen to have a specific library that has them, and you add some playing technique that triggers them (through a keyswitch or a cc value, any kind of command, actually). At the moment, those ornaments are not played back.
Another trick to make Dorico play an ornament is to add a staff above or below (right-click>Staff>add staff…), write explicitly what you want Dorico to play, then delete the +Staff signpost and suppress playback of the note in the main staff. Dorico will play the “deleted” staff content without ever showing it. It’s the best trick to play grupetti, mordents, etc…
Thanks for that. I will give it a miss because I don’t want to spend the time working it out.
That’s understandable. Dorico can do a lot of custom things by manually adjusting the Key Editor, but it does take extra time and effort.
