Could someone please explain to me why the sample rate for my “Video” export (File > Export > Video) only offers 16-bit, even though my audio track is 24-bit?

Which version of Nuendo are you referring to?
16-bit or 24-bit is about bit depth and not sample rate.
Video Export is limited to the MP4 file format, which by default uses the AAC compressed codec for the audio.

Yes, I was wrong when I said “sampling rate”!
So I can’t export a video at 48/24?

Assuming you mean a video with a PCM 24bit 48kHz audio track, the answer is No.
As mentioned above, Nuendo video export supports the MP4 file format only, which by default uses the AAC compressed codec for the audio (see the Video export window).
