I want to remove the instrument names from my score. I am writing one line of treble music and want no labels on the page. How do I do that?

If so, delete the text frame that contains the staff label:

Not to go on a rant, but this program has been incredibly unintuitive so far. Seems like I should just be able to double click it and edit it. Frustrating.

A link to the page in the manual which describes how to hide all instrument names in a layout was posted twice, above in the thread. If you click on that link, it should answer your question.
The problem I suspect Bagwada had is that the posted link doesn’t look obviously like a link, to some of us. Newcomers like me to the forum may be forgiven perhaps for thinking a bold blue header standing above and apart from paragraph text is just a smartly formatted header, even though after a sharp reminder we may feel mortified by our failure to recognize the link. As tedious as it may be, starting with something like “click on the blue header in the text below to see the details” when help text gets excerpted — rather than just providing a bare copy of the help text — would be very much appreciated by some new/occasional users of the forum.
Show/hide staff labels is a layout option. So go to Library>Layout Options
Note: You can have different layout options for each layout in you project, so make sure you select the layout(s) on the RH side.
I’m having the same problem. These instructions do not fix my problem. In “Galley view”, in “Write mode”, there are greyed out insrument names over every staff which make it so I can’t see the music at all above the staff. I have to scroll so the music is in like the last 2 inches of the screen. Aaaaaaaaaaa!!! I want them gone!

Why have you given a player so many additional instruments? (I’m sure you had a good reason, but it does seem a tad bizarre)

I don’t think you can turn those off, but you can edit the Galley View Margin Labels paragraph style and change the font size to something like 0.1 points. This will make them so small that you can’t see them.
Answer the question and then I’ll tell you why. How about that?
I’ll try that. The reason the player who is me is playing so many instruments because that’s the gig. I have to play seven instruments on one chart it’s for a musical theater piece with a reduced orchestra.

Those labels (Galley View Margin Labels) are generated by the Player name: Instrument. Just rename the player to something like Adrian or Player 1 , and it will display as following (taking much less space):
