How can I remove notes from the piano editor. For example, song in key of C major, how can I remove all the black keys(or disable the black keys) off of the piano editor so I don’t accidentally put a note on one?

On the incoming side there is a plugin called micro tuner that gives some flexibility for doing this, but I don’t think it’s what you are after. AFTER recording you can use the MIDI editor transpose function against a bunch of different key sigs.
I’m traveling and not near my DAW. But I think there is a preset to do this, or similar, in the logical transformer.
Yes, but I’m pretty sure it is POST recording. In other words, you can’t play and have the notes recorded with the transformer. You could write your own key oriented transformations for the input transformer, but that would be a PITA.
I’m not a big Reaper fan (in fact I can’t stand it), but the MIDI record key filter is pretty cool.
