In this screenshot it’s self evident that I have a player called soprano and the player called soprano II.
I’d like them to appear called that in the score - but secretly
we can see that
soprano is really “
soprano I ”.
But when I click “edit names” in the screenshot where she’s called “
soprano I ” we see that she’s not called "
soprano I" but plain "
soprano" .
So how do I remove her “I” qualification?
I don’t want to make any other changes - I know there are many ways in which I can get different layouts to put up different staff labels etc. I just want to use the defaults elsewhere.

You can elect to use Player Names in staff labels rather than Instrument Names. This is on a per-layout basis and you can select which players this applies to.
You can change whether staff labels show instrument or player names for each player in each layout independently, and on either all systems or only the first system in each flow. For example, you can show the player names for percussionists in full...
So just do this in the score and leave the rest to behave using your default settings.
Does this give you the result you’re after?
Yes, of course, that will work : but it does involve modifying layouts.
I was rather hoping I could just rename the player and remove that superfluous mysterious “1”.
Here is information about how and when Dorico automatically numbers instruments:

It would be good if we could select player name/label also here so that we can switch between player and staff label.

yes - that makes complete sense; I was just being stupid
You can always add a Space to the staff label. This way it won’t be the same as the other Soprano i.e. “Soprano “ and “Soprano” won’t auto-number.
Yes : what an excellent work round. Thanks
