Hi,
Is there a way to actually show the text of the string I choose in the proprieties panel of a cello?
Or do I have to make it as a playing technique?

You’ll need to use Staff Text or a Playing Technique.

Be aware that playing techniques have the advantage of automatically having duration lines, while on the other hand, they can cancel things like “pizz.” in playback, in which case you would need to suppress playback.
