Can I change the note names so A# becomes Bb, etc.?
You can, but there are some requirements.
First you need to have the Preference: “Event Display - Chords & Pitches” → “Enharmonics from Chord Track” enabled.
And then you need to have a chord track with at least one relevant event.
For example, if you are writing a tune in Eb major, you create a Eb Chord in the chord track.
Then, once you enter the Key Editor for any instrument, you will notice D# is no more, G# is no more, A# is no more, but there’s Eb, Ab, Bb instead.
Of course, if you then do a modulation to E major and put an E chord in the chord track, the key editor will again change to display F#, C#, G#, D# as it should.
