I am writing for cimbalom, but cimbalom sound in Dorico isn’t good. So, I use the piano as a starting instrument, which sounds closer to the real cimbalom sound. All music can be written on a single staff. Is it possible to delete one of piano’s staff, if there is no music on it?
There is a Piano with 1 staff option (in Setup), or double click in the first beat of the first measure (Write mode) in the staff you do not want, and right-click, contextual menu, Staff > Remove Staff

I think that may be an instrument that you added – I don’t see that as a factory instrument.
But you can expand the piano player card, click on the three dot menu next to the piano instrument, and choose Edit Instrument Definition. Then under Staves and Clefs you can set Number of Staves to 1. If you do things this way, then you won’t get the piano staff brace, which is still there if you do Remove Staff.
(You could also start with cimbalom instrument and configure it to play back as a piano, but that’s probably more work.)
Thanks for the idea! I actually need sometimes two staffs for the cimbalom, but most of the times, the part can be minimized to just one staff. Is there a way to hide the empty staff, like in Finale?
If you’re writing for Cimbalom frequently I recommend to invest in a VST instrument like Spitfire Cimbalom which is not expensive.
Then create a single staff cimbalom in the Instruments definition window by duplicating the two-staff cimbalom, renaming it and setting the number of staves to 1. Click on the star symbol to make it persistent.
Finally create two project templates for the single staff and two-staff version and assign the VST instrument to the player.
