In the pianoroll pane, I often switch between the select and draw tools. It would be very handy if the pencil tool could be assigned, as an alternative tool, to the Cmd-click shortcut.
Keep Cmd pressed, and you get the pencil. Release it, and you are back to the pointer.

Assuming you are talking about the Key Editor, are you aware of the ability to quickly change tools using the right-click mouse menu?

I use a touchpad in my Mac, and a single two-finger tap (equivalent to right-clicking) doesn’t show the tool palette. I’ve always been convinced that that gesture only returned to the arrow pointer.
To make the palette appear, you have to press the touchpad down with two fingers, and wait a little.
