I’d like to create a first time bar but instead of it saying (1.) for first time and (2.) for second time, I’d like it to say (open) and (on cue). This type of notation is common in jazz. Is this possible in Dorico at this stage? If not are there any workarounds?
Yes you can!
Go to Engrave Mode, select the first ending, switch on the “Custom Text” property and write “(open)”, then repeat for the second ending.
