To make an audio stereo track in cubase pro 9

I would like to make an audio stereo track for my classical guitar.

Can somebody tell me how?

I have cubase pro 9(windows) and my audio interface is a Clarett 2pre(focusrite).

I never did it but I suppose you could set up a stereo bus using the two front connections on the Clarret. Then record your guitar using two mics connected to the front connections to a stereo audio track using that stereo bus as the input.
