Good morning! I need to write for saxophones in a transposed key but without indication of the key, only using transitory alterations.
By default, for transposing instruments, Dorico always puts the accidentals in key.
Is there a way to change this setting individually for each instrument?

Yes, I believe you should be able to enter an open/atonal key signature on each saxophone instrument by typing Shift+K for the key signatures popover, then entering atonal and then confirming the popover with Alt+Return. The addition of Alt tells Dorico that you want the item to be created on just the current staff, rather than everywhere.
