Lets say i have selected an Instrument track and when i touch something on the Mixer then everything i touch creates an Automation lane with the instrument.
I cannot find a way to turn this off.

Turn write automation off.
You can turn it off. Open the Automation Panel, change to the Settings tab. There in the bottom left is the option.
