Is there a way to customize / edit the VST instrument list? I would like to move the content of “KV331 Audio” into the “other” folder

In the VST Plug-in Manager create New Collection. Here you can fully customise it.

Yes, you can in your own custom collections.
You can even include the same plug-in in multiple folders, or no folder at all and those will appear at the top of the list. That’s where I put my ‘go-to’ plugs so they are easy to access.
