I’m on deadline and all of a sudden this file is arbitrarily adding pages and then disappearing music from the flows. I can’t figure out how on earth to deal with this.

Your Top music frame margin in the Full Score layout is HUGE!
1143 mm equals 45 inches.
Try changing that to something roughly the same as the Bottom margin and see if that solves any problems.
It might be worth checking the Violin layout too.
PS
My preferences are set to display measurements in metric.
If you are using inches, the Top music frame margin will display as 45. Try putting a decimal point (with a leading zero) in front of the 45. That will bring it down to 11.43 mm.
