My wind chimes sound like tubular bells… 
I’m using (as far as I can tell) the latest versions of both Dorico and NotePerformer.
Does anyone know how I can get my wind chimes to sound like wind chimes?

Use the Mark Tree instrument (and rename it if you like) rather than the Chimes instrument. There’s an ambiguity here: neither you nor Dorico (nor NotePerformer) is wrong, per se.
