The problem is that whenever I use the EQ on the selected track, the project window goes off from 100% to smaller and I need to click it back 100% again. Why this happens, and how to fix and save the settings that the window of the project would always be 100% ?

Do you mean, if you oepn the Channel Settings Window?
Was the Project window maximized before?
The project window is originally maximized. When I click that E (=eq), which you can see on that screenshot (arrow showing it), the window jumps out from maximized (as you can see in the second screenshot)

It sounds familiar to me. I believe, it was a known issue back then.
