Hello, I am currently using a trial version of Dorico Pro. My primary DAW is Windows, however I also use my Macbook often when away from my studio. Does my Dorico Pro license allow me to install it on both or just one of these devices?

You can install on both Windows and macOS, and you can activate on up to three machines (but you are allowed to only use once at a time by one single user, or better said for your personal use).

Peter, if you could credit/mark the person who helped you and gave you the solution or answer to your question (in this case it is Christian_R, just above your last message). So you should actually mark his message with „Solution“ and not your own 
The reason for that is also - besides being polite - to enable other people to find the Solution quickly.
