I see references to a way to prevent a situation like this:
I just want the fermata on the last note - it seems to me that it would apply to all the others since they are still sounding - this just looks messy to me.
I see references to a way to limit the number of fermatas per staff, but have not found how to do it.
Please advise.

Select a fermata, check out the properties (bottom panel). If you choose to display only one fermata per staff (and not a fermata per voice, which is what you’re showing here), you should only get one fermata on the second beat of that instrument.
