I’m still new here, so probably missing something obvious, but I don’t see the rhythmic grid (or any ruler) in write mode unless in note input. What am I ignoring?
Nothing, if you mean seeing indications within measures. If you mean seeing what the grid’s current rhythmic value is, then @Alberto_Maria has set you up for action.
That’s where to set it, of course. If you’re asking about grids & rulers generally, this has been requested and discussed before. Search the forum for “ruler Dorico”, for example this very long thread.
Yeah, setting the resolution is straightforward enough (although I think there is a typo in the help files about which key commands increase/decrease the resolution), but I was indeed hoping for a visual way to make rhythmically disjunct copy/paste routines easier.

You can show the rhythmic grid in the system track by pressing Alt/Opt. Maybe this helps a little.
